Winemaker Comments
Viticulture
22 year old vines from a nearby grower were meticulously managed to ensure a balanced crop was ripened in the classic, mild vintage of 2010. Bird and disease pressure were again low this year and cropping levels in chardonnay were consistent with the long term average. Picking of our best chardonnay commenced in late February and was completed on the 6th of March. In 2010 the fruit destined for the Forester Chardonnay was taken in equal portions from the North (quartzy, mineral) and South (primary fruit flavours) blocks of our ever reliable Chardonnay vineyard.
Winemaking
The hand-picked fruit was held in cold storage overnight to eliminate the need for must chilling once it had passed through the crusher. Once the must was in the press an extended skin contact was undertaken. After pressing off skins and seperating press fractions, the juice was allowed to settle naturally before the racking to achieve a desired level of solids. Fermentation commenced in temperature controlled stainless steel vats and was then transferred to French oak barriques. Stirring of the yeast lees continued for four months before the wine was allowed to clarify and rest on lees for a further five months prior to blending.
Storage / Bottling
Bottled early December 2010 under screwcap in a premium burgundy bottle. This closure should extend the cellaring life of the wine by reducing subtle oxidative robbing of flavour. As with all Forester Chardonnays this wine is held in storage at the winery for between 12 and 24 months prior to release.
