Oak maturation A combination of new and one to two year old French oak barriques for eleven months.

Colour
Pale straw with hints of green.
Aroma
Subtle with fragrant characters of lemon, peach, talcum powder, roasted cashew, creamy lees and a complex flinty – lanolin character.
Palate Medium bodied with a creamy texture. There are characters of peach, fennel, cream and cashew with a firm, toasty finish.
Food matches Pumpkin ravioli, grilled veal chops.
Peak drinking
Drink upon release or over the following 4-5 years.

Winemaker Comments

Viticulture

36 year old vines from a nearby grower were meticulously managed to ensure a balanced crop was ripened during the warm and consistent vintage of 2014. Picking of our best chardonnay commenced on the 20th of February and was completed on the 27th of February. In 2014 the fruit destined for the Forester Chardonnay was taken in equal portions from the North (quartzy, mineral) and South (primary fruit flavours) blocks of our ever reliable
Chardonnay vineyard.

Winemaking

The hand-picked fruit was held in cold storage overnight to eliminate the need for must chilling once it had passed through the crusher. After pressing off skins and separating press fractions, the juice was allowed to settle naturally before racking to achieve a desired level of solids. A portion of the juice was sent straight to barrel for barrel fermentation, while the majority of the juice commenced fermentation in temperature controlled stainless steel vats
and was then transferred to French oak barriques. Partial wild fermentation in barrel was also used to add complexity and texture. Stirring of the yeast lees continued for four months before the wine was allowed to clarify and rest on lees for a further five months prior to blending.

Storage / Bottling

Bottled in December 2014 under screw cap in a premium burgundy bottle. This closure should extend the cellaring life of the wine by reducing subtle oxidative robbing of flavour. As with all Forester Chardonnays this wine is held in storage at the winery for between 12 and 24 months prior to release.

The aroma is shy and subdued, with pleasant aromas, peach and other stone fruit notes, with a light veneer of smoky toasty oak, honey and other artifact characters subtly applied, but the fruit leads the way. The profile is fine and stylish, elegant and reasonably understated, with balance and good length. Very appealing ‘clean’ style of chardonnay.”
